Red ‘n’ Green Family Recipes: Potato Skins

In a family full of picky eaters, tater skins are something that my family always enjoys. Tater skins are an easy dish to make that can be catered to anyone’s taste. We originally started making these for Thanksgiving because it was only my mom, sister and I so it didn’t feel necessary to make a huge meal. For about eight years now, we’ve kept the tradition of making tater skins for Thanksgiving. With both my sister and I being pretty picky eaters, tater skins are an easy dish that never disappoints.

Ingredients
6 Potatoes
A handful of shredded cheese
A handful of bacon crumbles
A pinch of salt
A pinch of pepper
Optional: Sour Cream

Instructions
Wash the potatoes.
Poke holes in potatoes to make sure the potato doesn’t explode.
Fully cook the potatoes in a microwave for around 15 minutes.
Slice potatoes in half.
Scoop most of the potatoes out of the skin, leaving a small layer still inside.
Add salt and pepper inside of the potatoes.
Fill the skins with cheese.
Top it off with bacon.
Bake at 400 degrees in an oven for 10 minutes.
Top with sour cream and/or any other toppings you would like to taste.
