Grilled Chicken Pesto Pasta with Asparagus

This recipe is a fan favorite in my family. It is my uncle’s recipe, and he makes it for any family get together that he can. My uncle learned this recipe from watching his mother make it, and now it is one of his favorite recipes to make.

Ingredients:

  • Chicken Breasts (I used 3 small, use however many you would like)
  • Italian seasoning
  • 1lb Asparagus
  • Creole seasoning
  • Cayenne pepper
  • Smoked paprika
  • Salt
  • Pepper
  • 12 ounces of pasta (Whatever kind, I used bowtie)
  • ⅓ cup pesto
  • 1 Lemon
  • Optional: parmesan cheese and cream cheese to make a creamy pesto sauce
Begin with gathering your ingredients. After ingredients are gathered, you should begin boiling your water. Once water is boiling, cook pasta according to instructions on the box, then drain the water from the noodles.
Next, gather the seasonings you will be using. The seasonings are just for your chicken, so you can season it how you would like it.
Cut your chicken and season it with the seasonings chosen. Then place chicken in a pan at medium heat and cook until the inside is no longer pink.
Wash and cut your asparagus to your liking. Toss the asparagus in ½ of the juiced lemon, salt and pepper. Then cover the pan in olive oil and cook asparagus in the pan on medium heat for 5-7 minutes.
Take the pot of noodles and add the ⅓ cup of pesto, or your creamy pesto sauce. Then combine in the chicken.
Place the Grilled chicken pesto pasta in a bowl. Top with asparagus and parmesan cheese if desired. Enjoy!
